First, the sweet potato was harvested in the fall. After storage, we can see that the sweet potato skin has wrinkles and the water is much reduced. The reduction of water has a great influence on the improvement of sweetness for two reasons. First, the decrease in water relatively increases the concentration of sugar in sweet potato. Second, in the process of placing, water participates in the hydrolysis reaction of starch in the sweet potato, and the starch is hydrolyzed into sugar, which increases the sugar content in the sweet potato. Therefore, we eat sweet potato in the winter to be sweeter than the baked sweet potato made from the freshly dug sweet potato.

Sweet potato preservation method

1. Store in a dry and ventilated place

You should first spread the sweet potato in the newspaper and soak in the sun, then pack it in a newspaper and store it in a cool place. This will increase the sweetness of the sweet potato. At the same time, it can be stored for about 3 to 4 weeks. If conditions permit, you can wrap the sweet potato in a newspaper and put it in the refrigerator compartment so that the sweet potato will last longer and will not germinate.

2. indoor storage method to store sweet potatoes

Sweet potato is cold, when the temperature is too low, it will be frozen, forming a hard heart, steamed unripe, boiled not bad; if the temperature is too high, it will sprout, it is best to control the room temperature at around 15 °C. Sweet potatoes are damp, which can easily cause pathogens and cause rot. It is best kept in a ventilated wooden crates.

If there is no wooden box, the place where the sweet potato is stacked and the wall should be covered with wooden boards, and the potato piles should be covered with something to prevent moisture. During the warm day, open the window to change the air to keep the indoor air fresh and prevent cold air from blowing in. The sweet potato that is bought from the market is best placed in the sun for a few hours to reduce the moisture of the wound and promote healing. When taking it, it should be handled gently to avoid bruising.
